针对当前茶叶加工的数字化和智能化水平偏低,精制工艺与工程装备不配套等突出问题,系统开展了针芽形绿茶和条形绿茶自动化加工关键参数研究,在此基础上,研制智能摊青模块、智能杀青模块、智能揉捻模块等关键设备,开发出智能化生产线的数据采集与监控系统(SCADA);构建针芽形绿茶和条形绿茶初制精制智能化成套设备 2 套,茶鲜叶处理能力≥400公斤/小时,工艺单元具备主要参数实时采集、故障诊断与自动监控等功能,实现了数字化集成控制,并在浙江、湖南、湖北、海南、江西等具有地理标志保护的茶叶主产区进行试验考核和示范推广,取得了显著成效,为实现我国茶叶的标准化、数字化和智能化加工奠定了良好的基础。In view of the low digital and intelligent level of tea processing and the mismatch between refining process and engineering equipment,this project has systemic studied the crucial parameters of automatic processing of needle bud green tea and strip green tea.Base on this,intelligent fresh leave spreading module,intelligent killing green module,and intelligent rolling module have been developed.Moreover,the data acquisition and monitoring system(SCADA)of intelligent green tea production line has been developed.Two sets of intelligent complete sets of equipment for processing and refining of needle bud green tea and strip green tea are constructed,with the processing capacity of fresh tea leaves ≥ 400 kg/h.The process units have the functions of real-time acquisition of main parameters,fault diagnosis and automatic monitoring,which realize digital integrated control.Till moment,it has been applied in Zhejiang,Hunan,Hubei,Hainan Jiangxi and other major tea producing areas where geographical indication protection.Demonstration and extension of these green tea intelligent production lines have achieved remarkable results,which has laid a good foundation for the standardization,digitization and intelligent processing of tea in China.

本课题该年度开展了茶叶初制精制工艺数字化关键参数研究,绿茶自动化生产线数据监控与采集系统的设计与实现,以及绿茶初制精制自动化生产线的集成示范三个方面的工作。取得以下一些突破,包括①以自动化生产线机制芽形绿茶为对象,基于茶叶品质形成工艺和视觉形态等内外因素,构建了外形品质的智能感官评价方法。为今后在规模化、智能化生产中专家工艺决策支持系统和标准化加工技术的研发,提供理论依据和数据支撑,在茶叶加工、贸易和精制拼配技术上具有较大的产业前景;②芽形绿茶的加工工艺相对其他绿茶品种比较复杂,芽形绿茶自动化生产线的设计,在提高芽形绿茶加工效率的基础上,也使其茶叶加工变得更简单可控,摆脱了长期以来做茶师傅“看茶做茶”带来的问题,并初步实现芽形绿茶加工的标准化;③在海南、湖南、河南、湖北四地新建每小时鲜叶处理能力>400kg的绿茶生产线4条。本年度开展的工作以及取得的成果,符合预期。 In this year,this project has successful applied.We have carried out experiments on this three aspects,including“study on the key digital parameters of tea primary refining process”,“the design and implementation of data monitoring and acquisition system of green tea automatic production line”,and“the integration demonstration of green tea primary refining automatic production line”.The following breakthroughs have been made,including:(1)considering the non-hand-made green tea which produced by automatic production line as the object,an intelligent sensory evaluation method of appearance quality has been constructed based on the internal and external factors such as tea quality forming process and visual morphology,.It provides theoretical basis and data support for the research and development of expert process decision support system and standardized processing technology in large-scale and intelligent production in the future,and has a great industrial prospect in tea processing,trade and refined blending technology;(2)the manufacturing of bud-shaped green tea is relatively complex comparing with other green tea varieties,and the design of automatic production line of bud-shaped green tea will result in improving the processing efficiency.This could also make the tea processing more simple and controllable,alleviating the problems which was described as“an eye must be kept all the time on the processing tea”,and initially realizes the standardization of bud-shaped green tea processing;(3)four new green tea production lines with processing capacity of more than 400kg per hour are built in Hainan,Hunan,Henan and Hubei.The project carried out in this year with the results achieved are quite in accordance with previous expectations.
